The Most Delicious Fries You’ve EVER Had

…and they’re sweet potato fries! Husband even said they were better than any fry he has ever had!! (He didn’t even use ketchup! And he puts that on everything!)

Ingredients:
2 sweet potatoes
4-5 tablespoons extra virgin olive oil
1/2 teaspoon sweet paprika
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1/4 teaspoon (or to taste) cayenne pepper (ye-haw!)
Coarse kosher salt

Directions:

  1. Pre-heat the oven to 450º. Line 2 cookie sheets with parchment paper.
  2. Peel each sweet potato, until you see the bright orange.
  3. Cut each sweet potato into 1/4, like so
  4. Cut each 1/4 into 4 strips, if they are too thick, cut each strip in half.
  5. Repeat until the whole sweet potato is cut up.
  6. Add all the cut “fries” into a large(ish) bowl.
  7. Drizzle the olive oil over the fries. Add the paprika, onion powder, garlic powder and cayenne pepper.
    Note: Try to sprinkle evenly over the top of the fries so there isn’t a big pile of seasoning. It will make it easier to mix
  8. With a spoon (hands are better though) mix until each fry is coated.
  9. In a single layer, so no fries are touching put all the fries down on the cookie sheet.
  10. Sprinkle the coarse kosher salt over the top of all the fries.
  11. Bake for 20 minutes, turning every 10 minute. And then an additional 5-7 minutes, or until the edges are crispier.
    Note: These fries, unless cut very thin and small, never get crispy-crispy. But they are so tastey you wont even notice!
  12. Remove from oven and sprinkle with additional salt. Let cool for about 5 minutes. Enjoy :)
