Wheat-Free/Gluten-Free/Vegan Chocolate Chip Cookies (Phew)
These. Are. Amazing. They kinda taste like peanut butter cookies. They are chewy and a little crunchy. Great for a pickier diet (plus, low carb!)
Arabian Lentil & Rice Soup (Vegan or not)
This soup reminds me of childhood. Chicken and rice soup, or something else warm and comforting. It is, without a doubt the best soup I have ever made [as agreed on by me, my mom, my dad and my husband]. Period. End of sentence. Delicious.
Pretty Much Pizza
Low carb friendly, if that’s your thing. Pizza delicious, if it’s not. Give it a try, it’s ready in less than 10 minutes (only 4 in the oven).
5 minute Fudge (Vegan or Not)
No. Seriously, it takes like 7 minutes all together to prepare and then only 15 minutes in the freezer…but 7 minute fudge didn’t sound as lyrical. And, at only about 75 calories a pop, you can’t really go wrong. Feel free to “indulge” in this simple dessert.
Tortilla Soup (Chicken or Vegan)
This soup is delicious. It’s also highly versatile, it can be vegan or meaty. And the toppings can be whatever the individual person wants. Make the soup and you have a meal for almost any type of eater.
Black Bean and Corn Flautas (Vegan)
These are spicy, and crispy, and filling. They are also a quick and easy meal and I highly that everyone try this recipe.
Blueberry Corn Pancakes (Vegan)
Delicious pancakes. The cornmeal gives them a great crunch. The blueberries add a perfect sweetness. You wouldn’t know they were vegan unless someone told you!
Green Peach Smoothie (Vegan)
Spinach & Kale for breakfast? YUP! AND IT’S DELICIOUS AND REFRESHING!!!!!!
Tofu Eggless Egg Salad (Vegan)
I definitely crave egg salad on a regular basis. This is a great substitute. It really does resemble egg salad (less eggy tasting, obviously)
Ok, I’ll admit it, I was shocked that these were good. I definitely was expecting to not like these, it’s a weird combination of ingredients. BUT they are a good chunk of your daily protein, but in a pancake. Yum!
I actually call them faux-chiladas, they are definitely not your traditional enchilada. While, the purest might get upset, I think they are actually tastier than regular ones!
Sneaky Mac & Cheese!
This is not box mac & cheese…this is amazing delicious mac & cheese, with a super secret ingredient…VEGETABLES! Yup, it’s higher in calories, but trust me, 1/2 a cup goes a LOOOONG way. Enjoy!
Damn Good Chicken Wings
Chicken wings at a restaurant/bar are about 200something calories each. So, you can have 2 of those OR you can try this recipe. If you can tell the difference, I’ll give you a penny.

Impress friends with this restaurant quality meal. They will think they are being spoiled with a high calories meal, so don’t tell them it’s less then 300 calories! Add some brown jasmine rice & greens and enjoy!
Have Your Cake & Eat it Too Pumpkin Pancakes
Delicious pancakes without guilt. Pumpkin Pie without guilt. Best of both worlds! These pancakes really do taste like pumpkin pie, but are still light & fluffy, thanks to a “secret” ingredient.
Pumpkin Chocolate Chip Muffins
The joys of pumpkin muffins/scones/bread without a ton of calories! These delightful little muffins weigh in at only 172 calories each. But it will be hard to have only one!
Pumpkin Seed Cranberry Trail Mix (Vegan)
Make it with cranberries or cherries or ANY dried fruit, super delicious! Also, pumpkin seeds are considered a new super food! Hazzah! GREAT for on the go people!

Like the movie! I am actually extra proud of this recipe, because I completely invented this way of cooking it (most likely someone has done it this way before, but I wasn’t looking at their recipe! It came out of my head….and was SO delicious!)

Lemon and orange make a beautiful pair in this paired down calorie, but higher fiber cupcake! But really, you need to have a treat every once in a while, and these a super satisfying!

A pancake mix and recipe that up the fiber and the complexity to pancakes. It also makes them like the most filling pancakes in the world. Even Husband can’t eat more then 3!
This hummus will knock your socks off! It’s so easy to make and would be great in a sandwich, wrap or even at a party! Add some baby carrots and you have a great low cal snack :) Also, very cost efficient.
