Honey BBQ chicken wings (a hungry girl recipe that wasn’t completely chemicals), garlic butter green beans and a little brown rice all on a bed of spring mix & romaine.

Sarah/HG’s Oh-Honey-Honey Boneless BBQ Wings
Ingredients:
1/4 cup whole-wheat flour
1/8 tsp. each sea salt and black pepper
8 oz. raw boneless skinless chicken breast, pounded to even thickness and cut into 16 nuggets
2 egg whites
1/4 cup BBQ sauce (with 45 calories or less per 2-tbsp. serving)
1 tbsp. honey
2 tsp. Original (wing) Cayenne Pepper Sauce
1/8 tsp. garlic powder
Directions:
1. Preheat oven to 375°. Line a baking sheet with parchment paper
2. In a wide bowl, mix flour, salt, and black pepper.
3. Place chicken nuggets in a large bowl, top with slightly whisked egg whites, and toss to coat.
4. One at a time, shake nuggets to remove excess egg and coat with seasoned flour. Evenly lay on the baking sheet.
5. Bake for 10 minutes. Flip chicken. Bake until outsides are lightly browned and chicken is cooked through, about 6-10 minutes. (There might still be some uncooked looking flour. You can’t taste it though and I didn’t want to overcook the chicken.)
6. In another large bowl, thoroughly whisk BBQ sauce, honey, hot sauce, and garlic powder. Add cooked nuggets and toss to coat. Eat up!

Huevos rancheros salad.
“Fried” egg, black beans, lite Mexican cheese, avocado and salsa over a bed of baby lettuce, romaine lettuce and some arugula.
I inhaled my food. In. Haled. And full!

I can rock out some cute desserts when I need to.
(Vegan) Chocolate mousse with graham crackers & raspberries.
Delicious.
(Mousse: 12 oz silken tofu, 12 oz dark chocolate, 1 tsp vanilla extract, 2 tbsp pure maple syrup, 1/4 cup original soy milk. Mix together all ingredient, sans chocolate, in the blender. Melt chocolate in double boiler. Let cool slightly. Add to blender. Mix. Pour in Tupperware. Let cool in fridge for at least 6 hours.)

Bed picnic with my husband. Watching season one of The Biggest Loser.
Dinner: Fajita chicken, avocado, black beans, lite Mexican cheese & grilled peppers/onions on a bed of baby lettuce with a little salsa.
Aprx. 290 calories
(it’s a little low but my 550 calories worth of snacks has definitely compensated. heh)

Couldn’t wait for broccoli to be done roasting before I dug into my egg/egg white/shredded zucchini omelet with lite Mexican cheese & avocado.
Also devoured my baby lettuce, black bean & itty bit of cheese salad before I took my picture too.
Broccoli roasted with olive oil and garlic powder @ 375° for 15 mins, flipped, 12 mins on the top rack.

I love this breakfast.
Siggi plain yogurt (6 oz.), raspberries (1/2 cup), a small peach and all natural honey almond zone cereal (1/2 cup).
I stay full for hours. And it’s damned tasty. And since I (try to) only have sugar in the morning. It’s a perfect combo of fruit sugars, and the little sugar that’s in both my yogurt & cereal.

Monotoned, but in a good way!!
Spinach & chive linguine with a little homemade marinara, turkey meatballs & fresh Parmesan.
Side of steamed asparagus (then sautéed in olive oil & garlic). And baby lettuce with garden tomatoes.
Seriously. So. Good. I wanted to lick my plate.

Dinner was phenomenal.
Baby lettuce salad with fajita chicken, black beans, lite Mexican cheese, avocado, sautéed veggies, tomatoes and (non-cilantro) salsa.
Sautéing veggies (onion, zucchini, eggplant and red bell peppers) in jalapeño olive oil was genius.
Aprx. 480 calories.

Dinner!
Ratatouille on baby lettuce with Parmesan twills and balsamic vinegar, rosemary grilled chicken (from Trader Joe’s). Side of unpictured kale chips.
It’s part of my 80/20 rule. 80% of my meal is made by myself and 20% is purchased. Usually it’s closer to 90/10.
Anywho. I licked my plate. I mean. Bowl.

For fathers day I made garlic butter steamed green beans and (red potato with skin) cauliflower mashed potatoes. And mom grilled chicken and corn.
I also made (vegan) chocolate cupcakes with a (vegan) chocolate mousse. He was in heaven. :)
Really delicious dinner. A little monotoned in color on the plate, we were out of lettuce.
